This two month 100% online program gives you the opportunity to focus on the intricacies of chocolate flavor, while learning how to taste chocolate consciously. You'll understand flavor in order to choose the perfect chocolate for both enjoying and using in your own chocolate recipes. You'll connect to a very special community of chocolate lovers during your learning experience.
How it works: You register for the program but only complete those assignments that interest you - everything is optional. There is no pressure. We suggest you don't miss participating in Assignment 1, 2 and 4 as they are a lot of fun to do!
This three month 100% online program in chocolate techniques prepares you to understand and practice all modern chocolate techniques in more detail to create your own fine chocolate bonbons, confections and bars. We begin with an in-depth understanding of chocolate and the chemistry behind successfully working with chocolate, then move from that foundation into recipe development.
How it works: You register for the regular Professional Chocolatier Program then opt for the: Chocolate Technique and Flavor Stream during the program. You'll get the same intensive learning experience, but will not be required to complete the last two business-focused assignments. You'll spend that time in additional study, recipe development and practice.
There's no difference in the depth and quality of the education you receive, whichever way you decide to go. Students completing this stream will receive a Certificate of Achievement in Chocolate Technique. Simply register for the regular Professional Chocolatier Program (not Plus with Business Plan) and then opt for this stream by only completing the required assignments during the program.
This two month 100% online program is all about the fact that chocolate grows on trees. We start with learning how cacao trees are grown; the fruit of those trees are harvested and the beans processed by the chocolate maker. We discuss sourcing beans, creating a successful chocolate flavor profile and making dried cacao beans into pure chocolate - even at home.
How it works: You register for the regular Chocolate Making from the Bean Program then opt for the: Cacao to Chocolate Stream during the program. You'll get the same intensive learning experience, but will only be required to complete the Tasting Assignments not the Graded Forums.
There's no difference in the depth and quality of the education you receive, whichever way you decide to go. Students completing this stream will receive a Certificate of Achievement in Cacao to Chocolate. Simply register for the regular Chocolate Making from the Bean Program (not Plus with Business Plan) and then opt for this stream by only completing only the required tasting assignments during the program.
