Fritz Knipschildt is an inspiration to his fellow chocolatiers due to his craftsmanship and skill in recipe development. His chocolates present flavor combinations, shapes and textures that take inspiration from his travels around the world.

Our Interview with Fritz Knipschildt

What motivated you to open a chocolate business?
I have worked since I was thirteen years old with a lot of passionate chefs—mostly French. I worked in France twice and Spain before coming to the United States in ’96 and starting the company in ’99.

Did you have any formal training in chocolate making?
I went to a school in Denmark that offered a combined pastry and chef program in four and a half years.

Where do you get your inspiration for the different flavors and textures you include in your chocolates?
A lot of my flavors are from the savory kitchen and textures are very important to us. That is why we do not just enrobe everything but also hand mold.

If you had to describe your product line in a couple of sentences, what would that be?
Classic recipes with a modern twist.

What is your personal favorite out of all the products you make and why?
Our eight-ounce signature box—it's a tour around the world in master chocolate pieces.
